•• The lovely Elizabeth Perkins joined today the crew on ABC’s “The Chew”. She was talking about she hates Thanksgiving. Well, she doesn’t hate everything about it but she does hate when someone brings a guest. She said she doesn’t want a guest at her Thanksgiving. She wants to stay in her pajamas and be a bum. She doesn’t want to talk to someone she doesn’t know.

Clinton Kelly said Elizabeth Perkins is a “bitch” on Weeds. And she agreed. Perkins said her character was named one of the worst TV mothers once by People Magazine. But she said she is not like that in real life. She just plays a mean mother on TV. Elizabeth also said when she was in the movie Big, with Tom Hanks, he almost wasn’t her costar. She said when she signed on for the movie Robert de Niro was going to be playing the role of Josh, the young boy who makes the wish to become big. She said they never shot the alternate ending either, which would have been Perkins’ character shrunken down and turned into a child again.

She also talked about her diagnoses with type 1 diabetes. She said her entire life changed in 2005 when she was diagnosed. She said it changed the way she ate and cooked, among many other aspects of her life. She is now a part of an organization called Diabetes Co-Stars, an organization that helps build a support network for people with the disease.

On the show, Elizabeth wanted to make a Thanksgiving dish that would be vegetarian friendly so she went with her roasted vegetable medley recipe, which you can get below.

Ingredients

  • 1 Medium onion
  • 1 Sweet potato
  • 1 Parsnip
  • 2 Cups of brussels sprouts
  • 1 Granny Smith apple
  • 1 Pear
  • 1 Cup of tart cherries (pitted). Can use canned cherries.
  • Tsp Cinnamon
  • 1/2 Cup of olive oil
  • Tsp Rosemary
  • 2 tablespoon of balsamic vinegar
  • Béarnaise sauce

Instructions

  1. Chop the onion, sweet potato, parsnip, brussels sprouts, apple and pear into equal sizes, about a 1/4 inch think. Add the vegetables and fruit to the pan with oil and begin sautéing.
  2. After the vegetables and fruit have been softened up, about 5 minutes, add the cherries, the cinnamon, the rosemary and the balsamic. Saute a few minute longer until the flavors have blended and the vegetables and fruits are soft. Salt and pepper to taste.
  3. Preheat oven to 350 degrees. Transfer the medley into a slightly oiled casserole dish, or any other dish you can cook in the oven, and put in the oven for 15 minutes or until golden brown on top.
  4. Serve will béarnaise sauce.

•• Golden Globe and Emmy nominated actress Elizabeth Perkins, who is living with type 1 diabetes, is partnering with Sanofi US on the Diabetes Co-Stars awareness campaign to produce a new documentary that will feature people living with diabetes and those who support them. Beginning today through December 16, 2012 people can submit their stories to the nationwide casting call at www.DiabetesCoStars.com!

Diabetes Co-Stars is an awareness campaign for people living with diabetes and their loved ones. Did you know that nearly 26 million Americans are living with diabetes, including 7 million who remain undiagnosed. Watch the videos below to hear her inspiring story and don’t forget to enter the casting call contest for a chance to appear alongside your favorite actress in a documentary about what it’s really like living with diabetes.

“I am partnering with Sanofi US to share my story through Diabetes Co-Stars and I look forward to hearing from others about their unique experiences living with diabetes and learning about the encouragement they receive from their own co-stars,” said Perkins, star of the upcoming ABC sitcom “How to Live with Your Parents (For the Rest of Your Life).”

Elizabeth Perkins, who is one of nearly 26 million Americans living with diabetes, currently uses Lantus® SoloSTAR® (insulin glargine [rDNA origin] injection) as part of her overall diabetes treatment plan, which also includes exercise and a healthy diet. Another important aspect of Perkins’ overall diabetes management is the support and encouragement from her husband, director and cinematographer Julio Macat.

“I always recommend to my patients that they reach out for support to help them manage their diabetes, as Elizabeth has done with her husband Julio,” said Perkins’ physician, Dr. David Kayne, M.D., of The Medical Group of Encino in Encino, Calif. “Elizabeth’s story is the perfect example of how valuable a strong support system is in a person’s overall diabetes treatment plan.”

People living with diabetes are invited to nominate their co-star—the person in their life who has made the biggest impact on their personal diabetes journey. People can also nominate themselves if they support a family member or friend with diabetes. Submissions will be judged on their ability to inspire others through their story of support in diabetes management.
